The decoloration time of MMRT was more related to TBC and coliform count than MBRT (R>0.5, p<0.05). Both dye reduction tests were related to pH at 4 and 6 hr. Additionally, the decoloration time of MMRT was correlated to titratable acidit at 4 hr compared to 6 hr with which from MBRT. In the other hand, the lactic acid content of 0.16 0.01 gm% at pH 6.52 0.01 affected dye decolorization from MMRT more obviously than the MBRT. Lactic acid production and pH changes were statistically highly related to coliform and total bacterial counts. Consequently,MMRT can be served as a new dye indicator and facilitate monitoring of milk quality. |
